Shoyu Caramel

Overview

This is a specialty sweetener I use for the Umami Sazerac I have been recreating.

Ingredients

  1. 15g (1tbsp) soy sauce
  2. 3/4 cup granulated sugar
  3. 1/4 cup water
  4. 1 tsp vanilla extract

Instructions

  1. Combine all ingredients in a saucepan over medium heat. Stir until sugar dissolves.
  2. Stop stirring and cook until the caramel turns a deep amber color.
  3. Remove from heat
  4. Let cool before using
  5. Store in fridge
