Shoyu Caramel

Overview
This is a specialty sweetener I use for the Umami Sazerac I have been recreating.
Ingredients
- 15g (1tbsp) soy sauce
- 3/4 cup granulated sugar
- 1/4 cup water
- 1 tsp vanilla extract
Instructions
- Combine all ingredients in a saucepan over medium heat. Stir until sugar dissolves.
- Stop stirring and cook until the caramel turns a deep amber color.
- Remove from heat
- Let cool before using
- Store in fridge
